The shallow, wide shape of this pan creates a large cooking surface that lets liquid evaporate quickly for optimal development of the socarrat. Socarrat, the crispy, caramelized base of the paella, is toasted on the bottom of the pan which is why this pan is designed to serve the paellas as well so the socarrat isn't lost.
Durable Carbon Steel Construction
This pan is made of enameled carbon steel with a dark black finish that absorbs, radiates, and distributes higher heat and protects the pan from rust and discoloration. The enameled coating also provides and elevated presentation when serving your guests.
